Current Keto (low-carb) Favs
We've been trying Keto lately. If you're wanting to know the science/details of how Keto works I am NOT your girl 😂 However, if you want some recipes that are EASY and YUMMY, then I am your girl FOR SURE. In the quest for the yummiest, easiest healthy foods I found some of these on Pinterest or they're from my mom! We've found it easiest to stick with these same recipes just in rotation for about a month. I will print of the recipes of choice, staple them together and stick the lil book on our fridge because we alllll know the frustrations of looking at a recipe from Pinterest and then your phone locks and then you open Pinterest again only to find the recipe has disappeared into the abyss AMIRIGHT???
Breakfasts: We make egg muffins. I kinda made this up/kinda used other recipes, but the basics are....
1. Preheat oven to 400 degrees
2. Cook a pack of bacon until ready (not crispy, just cooked)
3. While that's cooking whisk the following all together in a bowl: 12 eggs, 1.5 cups chopped spinach, 1/2 cup heavy cream, 1/2 cup of whatever cheese you fancy
4. Butter your muffin tin and fill with egg mixture until about 3/4 full
5. Top the muffins with 1-2 strips of cooked bacon
6. Cook in the oven for 18 minutes
7. ALL DONE. We keep them in the fridge and in the morning we set the oven on HIGH broil and pop some of these in for about 6 minutes.
P.S. They're super yummy. Even if you ain't on a diet you should make these.
Lunches: For lunches, we mostly do a mixed greens salad topped with a salmon patty (you can get these frozen at most grocery stores and cook 'em up in a George Foreman or whatever you fancy) or some rotisserie chicken, feta cheese, Mitch likes cherry tomatoes (but raw tomatoes make me 🤢), AND KEY INGREDIENT HERE: 1/2 an avocado*, and top it off with your fav higher fat, lowest carb dressing! *if your avocados are hella expensive like they are in Utah, we've found the best deal to be a big pack from Sam's Club
Also for lunch, about once a week we get double-doubles from In-n-Out protein style YUM. Most fast food places you can get a bunless burger if y'all don't have an In-n-Out (which is sad cause yum, but also lucky you because you also probably live in a place where avocados aren't stupid expensive sooooo #youwinsomeyoulosesome)
Dinners: These I am separating into two categories Crockpot Meals and Regular (but super fast) Meals:
Zuppa Toscana Soup *We love this stuff. It's got a little kick to it and its freakin delicious.
Taco Soup *My mom recommends making a double batch and freezing some for lunches later. We haven't tried it frozen and reheated to I cannot attest to its yumminess that way, but we made it for dinner the other night and I can attest to its yumminess whilst fresh!
Soo far these are the only two crockpot meals we've tried and liked. We did a 30 day meal prepped, Whole 30, freezer bag meals thing last semester I MEAN THE WHOLE SHEBANG and let me tell you, it was absolutely, positively the worst decision I have ever made. We spent $450 and 6 hours of our precious time, making the NASTIEST POOP FOOD of all time. We gave our best effort to eat that poop, crap, nastiness but honestly if a crockpot recipe remotely smells like those meals I feel my PTSD come creeping on in. If someone tries to get you to do one of those freezer bag, 30 day meal prepped things RUN AWAY THEY ARE LYING ABOUT IT BEING TASTY AND SAVING YOU MONEY because you make the damn stuff and then throw it away and order pizza because you starved after a day of work on your feet all day. Okuuur. Rant over. Now onto....
Regular (but still fast) Meals (in order of quickness):
Egg Roll in a Bowl *We make this stuff alllll the freakin time. It does save pretty well so if I make double, I can take some for lunch the next day too. Note: buy ON BRAND soy sauce if you don't, its gonna be a SAAAAALTY meal
Cauliflower Mac n Cheese *Mitch is normally our master of the Cauliflower Mac n Cheese and he sometimes adds bacon or switches what types of cheese he uses. Any of the ways its yum.
We have been loving celery with a lil bit of natural peanut butter, baby bell cheeses, cheese sticks wrapped in meat, Bai drinks, ICE drinks, aaaand water. (lol not a snack but more of a reminder to DRINK LOTS OF IT p.s. more of a reminder to myself than anyone else)
Also: I don't know if this is "Keto rules" appropriate but my mom told me we can do it and I still do what my mom says 🤷🏻♀️ but we have a square of dark chocolate at night. Just one, but its oh so good.
